A worthwhile investment
If you love Chemex coffee, do yourself a favor and get this. It’s quality-made and you shouldn’t ever need to make the investment again. It saves so much time babysitting the boiling water and pouring it at the right temperature, which is the only thing I didn’t like about making Chemex style coffee. It is very easy to use, just a simple one-press will begin the brew cycle, and you can also choose whether to keep the hot plate on after brewing is done, or not (based on which direction you flip the switch to turn it on).As a Chemex fan myself, I highly recommend this brew station. I think anyone who likes coffee needs one of three things: a French press, a Keurig machine, or this. If you’re a coffee lover you probably want to have all three. Of those options, this makes the best coffee, so it’s understandable it would be the most expensive. One difference from other coffee makers is that this will always use the entire water reservoir, there is no size selection as it is calibrated to make a full Chemex pot (if the reservoir is full), or however much you want if you put less water in. The reservoir does have measuring marks on the side which are also helpful. Just note the major difference with not being able to select a size on the machine itself, it always uses up all the water you give it.

Just about the most perfect coffee maker!
I’m not on the level of those who roast their own beans and weigh the grounds for precise brewing, but I am a person who grinds fresh daily and enjoys pour-over. I just really hate standing there pouring and waiting, rinse repeat. When my 4th Grind and Brew died on me, I was looking at the technivorm moccamaster. It was spendy, but seemed like it was what I was after. I had work colleagues recommending chemex, and when I looked into it realized that I’d have to stand there and pour over which was not my cuppa. I’m just too bleary in the morning to deal with that. But then I saw chemex had a coffee machine! This was the best of all worlds… It was pour over but I didn’t have to stand there pouring. It had a hot plate so I didn’t have to worry about my carafe getting cold. I already had a burr grinder so we were ready to go. Plus it was damn sexy looking, moreso that the technivorm. Now that I’ve had it a month and have used it daily, I can say I’m extremely pleased with it.The only two things that I wish it had are a beep when it is done brewing, and some kind of tab or grip on the reservoir lid to make it easier to open. But these do not in any way take away from my love of this machine. I ended up getting the 8 cup carafe separately on a lightning deal, and both together were about the same price as buying the 8 cup set up directly from Chemex with shipping. The paper filters are very expensive anywhere online, but I’ve found them at Williams Sonoma in my area for the same price chemex sells direct, also no shipping cost.I’m also experimenting with Coffee Sock’s reusable cotton filter. So far it’s great.I haven’t tried a steel filter yet.

Brews a perfect pot!
We’ve been brewing pour over coffee for about 5 plus years and got tired of the morning process. This machine takes the labor out of that process and we love it! We set the machine up on a timer so coffee is all ready for us in the morning. It’s pricy but worth it and it made an excellent gift gor wife’s 50th bday!

Convivence is great (10 out of 10). Coffee quality, it is okay (8.5 out 10).
To put my comments into perspective, for the last 5 years I made my coffee using the pour over method to get my version of a perfect cup of coffee. The chance to give myself back 20 minutes every morning was very tempting. After much research of reviews, I opted for the Chemex Ottomatic Coffee Maker. The question â can it really make coffee as good as the pour over method. After a couple weeks of using the Chemex my verdict is that for the price, it is ok, especially since it saves me time in the morning.Took a week to get the ratio of water and grounds right for my preference.I rate my pour over coffee a 10 in terms of flavor and the Chemex coffee an 8.5.In terms of convivence, the Chemex is a 10.Downsides: I canât brew more then 6 cups, because the grounds (8 tablespoons) in the filter over flow. The bloom from the Chemex is not as great as that from when I do it myself because the initial water flow is too fast. The heating element does not keep the coffee warm enough, so I set the carafe on a separate heating element when brewing is completed. The Chemex is well built, except for the heating element and very stylish. So, was the price ($350) worth it? I am still trying to decide. Compared to doing the pour over myself, the convivence is great (10 out of 10); in terms of coffee quality, it is okay (8.5 out 10). Something to consider if/when you make your purchase.
